No spanish language 
Looks like its not included in the 5.1 release .But It will be available in the upcoming version.
You may also check out the 5.5 beta version for trial purposes.

I have opened a ticket to correct the documentation: https://issues.couchbase.com/browse/DOC-3628
You can create a custom stop-word filter and load in Spanish stop words, but there is no way to adequately perform Spanish stemming with this version of Couchbase.
